How to choose the right glassware for your restaurant

Are you planning to open a restaurant and looking for some tips to find the glassware that best fits your establishment?

Choosing the right wine, champagne, water and cocktail glasses can make a big difference. Obviously, you can’t take other establishments as a reference without first considering your specific activity, your budget and the type of clientele, as they probably won’t be the same.

In this article, we explain what aspects you should consider when choosing glasses for each type of wine and other beverages.

The importance of choosing your glasses carefully

Offering good wines on the menu is one thing, but knowing how to showcase them is another. Whatever the wine, it must be appreciated with all the senses: visual, olfactory and, of course, gustatory.

But what are the criteria that should really help you choose your glasses? First of all, you should know that not all establishments have the same needs or the same budget. In addition, you may not have the space to store a large amount of glassware. If you have an inn or a fine dining restaurant, you probably won’t use the same type of glassware.

And, of course, the type of wine and alcohol you offer will have a direct impact on your glass purchase: you will not need the same glasses for a young wine served in a bar as for a fine dining restaurant.

Finally, your glasses must be resistant: breakage is a frequent occurrence in the catering environment. It is good to know that nowadays most manufacturers offer glassware specially designed for professionals.

How to choose the right glasses

✔︎ Opt for glasses that allow a sufficient quantity, but leave enough space to make a slight rotational movement with the wine. This action increases the surface in contact with the air and allows a better perception of the aromas. But do not overdo it: glasses should not be too large and disproportionate to the rest of the service.

✔︎ The rim of the glass should be of quality: you can run your finger lightly along the rim to make sure it is smooth. This part is very important as it is the part that is in contact with the lips.

✔︎ The type of wine on your menu also plays an essential role in the choice of glasses. For example, for red wines, opt for fairly large glasses with a wide goblet. On the other hand, for white wines, it is not necessary for the glasses to be so large, because not so much space is needed for the movement of the wine and the development of aromas.

Some examples of wine glasses

When choosing wine glasses, you will find several references:

✔︎ Bordeaux type glass: tapered shape, with a wide opening, designed to favor the oxygenation of Bordeaux wine, which needs more time than other wines to express itself.

✔︎ Burgundy type glass: more rounded in shape, it concentrates all the aromas and offers a more restricted aeration due to its narrower opening.

✔︎ The champagne glass: it should allow you to enjoy the bubbles. Contrary to what one might think, it should not be too narrow, as champagne is still a wine. Rather than necessarily opting for the traditional glass, a shape that tapers towards the foot and has a slight bulge is recommended.

And for cocktails?

There is a wide variety of glasses and cocktail glasses that should be adapted to your offer. For cocktails with a high alcohol content, it is recommended to prioritize small glasses, while for milder cocktails you can choose larger glasses.

Among the cocktail glasses you will find: shot glasses for pure liquors, Martini glasses for cocktails with ice, Old Fashioned or Rocks glasses, designed more for whiskey.

And don’t forget that the transparency of a glass makes all the difference: it allows you to appreciate the color of the drink or the mix of shades of a cocktail, inviting you to taste and enjoy the pleasure of drinking.

Pilsa by Dani García

Last December we completed one of the most original projects, thematically speaking, that we have carried out in Pilsa in recent years. This is Dani Garcia’s restaurant, located in the Hotel Puente Romano, Marbella.

The 340 m2 restaurant is an open concept space, without physical barriers between the kitchen and the dining room, so that the visual contact between cooks and diners is constant. This is a detail that we are applying more and more in our projects. Dani García was very clear that the spectacular space where the kitchen is located should be the light of the whole place, contrasting with the colors and elements of the rest of the restaurant.

In addition to all of the above, Pilsa had one more challenge to achieve… and that was to make the newDani Garcíase restaurantbecome a unique experience for everyone who walks through its front door, making them feel like the protagonist of a real “children’s story”. Therefore, fantasy and children’s decor had to permeate every corner of the restaurant. Precisely the uniqueness of this project is to have created a true fantasy and fairytale environment, playing with the contrast of colors and materials used in the design.

Pilsa was in charge of the kitchen, which was clad in Dekton, a material with unique characteristics in the market and with infinite possibilities. From an operational point of view, the Dektona surface givesthe countertops and walls of the restaurant’s impressive kitchen a series of unique technical characteristics. The first is the safety and hygiene offered by this material in contact with food, which was a determining factor in the choice of Dektona for this project. The kitchen or “the light” of the restaurant, as the Malaga chef himself defines it, illuminates the rest of the premises thanks to this material. This pure white contrasts perfectly with the green of the natural plants that cover the walls as a vertical garden and with the dark, industrial-looking color of the floor.

The renowned Chef, as well as Pilsa, were very satisfied with the result obtained. It was a real pleasure to work hand in hand with a professional like Dani Garcia, and luckily we can tell you that soon you will know new facilities in which we are immersed with this great chef.

Last December we finished one of our most original and creative projects in the last years. It involved a restaurant which has been designed for famous chef Dani Garcia, in Puente Romano Hotel, Marbella (Malaga).

340 square meters of open space without physical barriers between the kitchen and dining room were built where there is visual contact between chef and customers. This idea is increasingly been applied in our projects. Dani Garcia was very clear about having the cuisine as the source light of this spectacular space by contrasting the colors and the elements of the restaurant. The kitchen was built in Dekton, white material which perfectly combine not only with nature plants on the wall, but also with the floor.

In addition, Pilsa had another challenge, turning the restaurant into a unique experience to everybody who comes into it. The main idea was to make the client into the protagonist of a children’s book. Therefore, there should be fantasy and children decoration in each corner of the space.

From an operational point of view, Dekton material offers unique characteristics, such as safety and hygiene, essential characteristics to choose this material.

The renowned chef and Pilsa were very pleased with the result. It was a pleasure to work hand-in-hand with Dani Garcia who is a great professional in this sector. Soon you will be able to know more about Pilsa and Dani Garcia joint projects.

Hyatt Ziva Cancun Project

Last March, Pilsa had the pleasure of completing one of its latest projects in Mexico, specifically in Cancun for the Hyatt hotel chain.

We are referring to the hotel complex“Hyatt Ziva Cancun”.

We take care of the manufacture, equipment and installation of buffets (cold and show cooking) and restaurants in different environments.

Among them, the American Dinner (a “50’s” style American hamburger restaurant that even includes a Cadillac used as a table for customers), Asian restaurant (which includes one of the two 14-meter tepanyaki plates that Pilsa has manufactured exclusively for the complex, as well as a spectacular kitchen), Tequila restaurant, Pool Bar, Grill restaurant, Coffee-Desert Brew House (a dessert, chocolate and ice cream lounge that leaves no one indifferent thanks to the colorful decoration), Italian restaurant (where we have incorporated two ovens for pizzas, which are used as a table for the guests), Coffee-Desert Brew House (a dessert, chocolate and ice cream lounge that leaves no one indifferent thanks to its colorful decoration), Italian Restaurant (where we have incorporated two really incredible pizza ovens, not only for their design, but also for their functionality and quality), French restaurant and the great novelty, a Cevichería, which until now had not been manufactured or installed by our company.

The two 14-meter long slabs, which Pilsa has manufactured for the first time for this complex, have been a real success.

All designed and manufactured by Pilsa according to the latest trends in the sector and with the latest in technology and sophistication. In this way we have managed to combine design, style and functionality, to offer both our customer and the final consumer, the best of experiences.

Last March Pilsa had the pleasure to finish one of our latest projects in Mexico, particularly in Cancun.

It is the Resort Hotel“Hyatt Ziva Cancun”.

Pilsa took care of the equipment and development of buffets (cold and show cooking) and different restaurants.

This includes an American diner (a burger restaurant style of the 50s which has a Cadillac as a table), an Asian restaurant which includes one of the two 14 meters “tepanyakis” griddles that Pilsa has made and an open kitchen. These griddles have been elaborated exclusively for the resort. A tequila restaurant, a pool bar, a grill restaurant and an Italian restaurant where we have installed two incredible, functional and good quality ovens.

Also you can find a coffee shop called Coffee-Desert Brew House where you can enjoy a whole variety of chocolates, desserts and ice-creams with an eye-catching decoration. A French restaurant and finally, the great novelty, the “cevicheria”. This is so because as for now Pilsa has not elaborated anything similar.

As mentioned above, two 14 meters griddles have been developed by Pilsa for the first time, and they have been a real success.

All of these have been produced and designed by our company according to the latest trends in the sector and advances in technology and sophistication. This way has brought us the opportunity to unite design, style and functionality to offer our client and end consumer the best experiences.
