The secret of a good croquette is not only in the dough.

You know that friend who is there for everything? The one who always answers when you call him, who listens to you when you need him, who is always by your side. Well, something similar happens with the croquette, which can be served for dinner any day, as an accompaniment to any lunch, or as an appetizer before lunch. Today, January 16, is International Croquette Day, and at Yelow we want to celebrate it.

The croquette occupies an important place in our diet and it is also part of our tradition. A simple Google search returns thousands of interesting results and some links point to how to make the perfect croquette, although we all know which is THE CROQUETTE: the one your mother makes.

And although part of the secret is in the dough, there are also other elements that are key to making a good croquette. The utensils we use are of great importance for the success of our recipe. Here are four devices that will make it easier for you to achieve the perfect croquette.

Deep fryer. To ensure that it is cooked in the best way, the croquette should be made in a deep fryer. This way it will look the same on all sides, we make sure it does not break and it is cooked at the optimum temperature.

The croquette machine. On one side we put the dough, and with the help of a lever we turn it into three equal rolls. Now we only have to cut the dough to the length we want. A great help if you have to make a lot of dough.

Tips on how to clean pots and cookware

In the world of hospitality it is essential to keep our crockery, cutlery, pots, pans, frying pans and cookware in perfect condition. In addition to keeping them clean, we must go a step further and always have a totally disinfected and debacterized kitchen.

It is normal that over time, the exteriors of the pots and pans get the color of burnt, or that some cooked food has passed to a better life by some small oversight. To solve these possible mishaps, we propose several ways and tricks to leave your cookware as good as new.

Sodium bicarbonate.

One of the properties of baking soda is that it contains natural acid particles. This gives it great properties for use as a cleaning product.

Try sprinkling in the bottom of your pots a little of this product, about two tablespoons, add a splash of water and bring it to a boil. Wait a few minutes. Add baking soda again, this time on your sponge and use your usual detergent. You will see how the grease comes out more easily. Don’t forget to rinse with plenty of water and dry with a clean, dry cloth.

Vinegar.

Try using the vinegar directly on the pan, pour it on the surface, either inside or outside, wait a few seconds and scrub with the sponge. Depending on the type of material of the pots you could use an aluminum scouring pad, but we recommend that you use it only on the outside of your cookware, and ONLY if the material allows it, as you could scratch your pots and we do not want them to lose their properties.

Vinegar is a great degreaser and disinfectant, it has the advantage of being totally natural as well as being a good product to eliminate all types of odors.

Lemon.

Lemon can also be used to shine your pots, pans and cookware. Cut the lemon in half and rub it on the part where you have the grease stain or burn, wait a few minutes and try cleaning as usual. The lemon cleans and disinfects and leaves the surfaces shiny.

Water and salt.

This simple method can be useful if the food is not stuck to the surface of the pan.

Make a first cleaning with your usual detergent, once only the stuck parts remain, pour a finger of water and add a handful of salt, bring it to a boil and let it stand for about 20 minutes. Clean again with the sponge and the detergent and you will see how your food stains will disappear.

Degreasing products.

There are a multitude of degreasing products on the market that help to completely clean cookware and other items. They are just as effective as the previous methods, but we have found one drawback: they are products based on chemical reactions. They are less respectful with the environment and with the health of your skin than the methods we have proposed above.

Avoid boring salads with only oil and vinegar and take note of these simple tips and tricks.

Dressings

  • The traditional vinaigrette has three quarters oil, one quarter vinegar and salt. Change the salt for soy, the sesame or coconut oil and the vinegar for lime juice, lemon juice or mustard.
  • Add aromatic herbs such as spices, some sweet element such as honey or orange juice (but in this case, I raise the salt point a little).
  • Say NO to vinaigrettes with 18 ingredients… As in fashion, less is more. Of course, if the salad is not a side dish, but the main course, then, complicate your life a little and try new things like introducing vegetables and nuts in moderation.
  • Hearty salads (endive, raw cabbage, etc.) look great with creamy dressings made, for example, with yogurt and lemon juice, white pepper, chopped mint and olive oil.
  • If yogurt does not convince you when it comes to dressing, try mashed avocado seasoned with oil, paprika, salt and lemon.
  • Tomato can also be a great ally as a dressing. Chop it into very small pieces and macerate it with thyme, chives, chilli, crushed garlic, oil, salt and nuts.
  • Do you love garlic but find it indigestible? Rub it on the plate where you are going to serve the salad, so you will have flavor without having to eat it.

We are sorry to have to mention it, but it is a fact: this summer is coming to an end. September is just around the corner, that cursed month in which the calendar insists us to get back to the routine and resume all those tasks and obligations that for some days we have completely forgotten, focusing exclusively on disconnecting and recharging batteries. That’s assuming that you have enjoyed your vacation days, since some of us have continued working, in our case to offer you a lot of news for the return to school, of which you will soon have new news.

However, regardless of whether you are still on vacation or like us you are already working, we still have a few weeks left of the warm temperatures typical of this season, as well as all the plans that allow us to make: enjoy family and friends, make getaways to the beach (or mountain, according to taste), terraces, savor a good gastronomy full of seasonal products, accompanied by cold drinks. The mocktails are cocktails or mixtures made with non-alcoholic beverages, especially indicated to enjoy outdoors in good company. Its origin comes from the English language, which uses the term ‘mock’ (which could be translated as simulated or pretended) to allude to its innocuous and alcohol-free character, although its preparation and final appearance is very similar to that of such well-known drinks as the Cosmopolitan, mojitos or caipirinha.

Beyond its non-alcoholic character, which is an interesting alternative for a wide public (drivers, pregnant women, athletes, teetotalers, children and a long etcetera), the main attractions offered by mocktails are their succulent flavors and low caloric content, which has made them a rising ‘healthy’ trend in the restaurant sector. In fact, more and more catering establishments are including in their menus a section specifically dedicated to this type of cocktail.

Most of them combine different flavors in the same preparation, although the base is usually fruit juices, with exotic or tropical seasonal varieties being widely used, which combined with other elements guarantee a high refreshing power.
